That pie is beautiful, would you consider posting the recipe?

wendy - thanks! as for the behind-the-couch business, i can be brave. it's only once a year.

eden - oh, the recipe is so easy it's almost shameful.

1 pre-made pie crust (the kind with the crimped edges, frozen food section)1 package of chocolate pudding mix (one that has "for pie" instructions)whipped cream (i whipped it myself and made it very thick), and strawberries!

bake the crust alone according to instructions on package, let it cool, add pudding layer, refrigerate for at least an hour, add whipped cream layer, top with strawberries.

very easy, very pretty, very yummy!

P.S. as for the whipped cream, if you make it yourself you can use a brand like "rich whip." i put my mixer in a bowl and let it whip for about 10 minutes.

Yep, that sounds very easy, and not very WW approved--but woman cannot live by berries and twigs alone, occasionally she likes dessert too!

oh, i'll bet you can trim some points off with lite-whipped cream or diet chocolate pudding (things i can't find kosher, btw)...

Sorry to hear that you can't find some lighter things Kosher. How does that work? Does a Rabbi have to approve the product or the processing method? I've seen the little labels on things before.

But my whole philosophy on dessert is that it's supposed to be bad for you, so who cares! My SIL is always trying to get me to eat fat-free, sugar free ice cream and cookies and etc....no thanks, those things taste like plastic, I'll just eat the good stuff in moderation! And that's what I'm about these days...moderation.

Wow! That looks like behind my couch. Glad to know that I have company in the clutter as well as in the cleaning! :)
